Nouvelles hypothèses sur la synthèse des anthocyanes dans les baies et dans les feuilles de vigne

La réalisation, peu après la nouaison, de 2 incisions annulaires qui isolent la grappe centrale des rameaux de Merlot noir portant 3 grappes entraine, à la vendange, des différences dans les teneurs en anthocyanes et en tanins des baies et des feuilles par rapport aux baies et aux feuilles témoins de mêmes rangs sur des rameaux non incisés. L'étude de ces modifications montre que les variations de la teneur en tanins des pépins et des péricarpes sont inverses de celles de la teneur en anthocyanes de ces mêmes péricarpes: ainsi, les baies des grappes isolées qui ne parviennent pas à vérer accumulent des tanins dans leurs pépins. Dans le cas des feuilles, les variations de la teneur en tanins suivent celles des anthocyanes et ces composes s'accumulent ensemble plus vite et plus intensément dans les feuilles inserées au-dessus de l'incision supérieure. Si l'influence de la double incision s'est toujours traduite de la même manière pour les cycles étudies, les conditions annuelles ont profondément modifié l'intensité des synthèses des composés phénoliques analysés. L'ensemble des résultats obtenus conduit à suggérer l'existence de 2 voies de synthèse des anthocyanes différentes selon les organes: celle des baies pourrait s'effectuer indirectement à partir d'une fraction des tanins accumulés avant la véraison dans les pépins et les péricarpes; celle des feuilles sénescentes proviendrait directement des sucres qui ne peuvent plus être exportés après la maturation des raisins.
New hypotheses on anthocyanin biosynthesis in berries and leaves of the grapevine
Two girdlings isolating the central grape of 3-grape Merlot canes led to modifications of anthocyanin and tannin contents in pericarps, seeds and leaves. Results suggest the existence of two different metabolic pathways for anthocyanin synthesis: from seed tannins in the berries and from carbohydrates in senescent leaves, under the effect of a substance liberated into the phloem by the leaves.
