'E descritta l'identificazione degli esteri etilici degli acidi 2-ossi glutarico e 2-ossi glutarico γ-lattone attraverso lo studio degli spettri di massa dei composti volatili e degli esteri metilici degli acidi fissi del vino.
1 due composti, presenti in tracce nei vini giovani, possono superare il mg/l nei vini invecchiati.
Identification of ethyl esters of 2-hydroxy-glutaric acid and 2-hydroxy-glutaric acid γ-lactone in vines
The identification of ethyl esters of 2-hydroxy-glutaric acid and 2-hydroxyglutaric acid γ-lactone, by means of the mass spectra of the volatile compounds and of the nonvolatile acids' methyl esters, is described.
The two compounds, present only in traces in young wines, can exceed the concentration of 1 mg/l in aged vines.
