Les composés phénoliques des entre-noeuds de <i>Vitis vinifera</i> L. var. Ugni blanc au cours du cycle végétatif: <p>Étude de l'évolution de leur structure</p>

Les composés phénoliques solubles totaux extraits des entre-noeuds de Vitis vinifera L. var. Ugni blanc ont été fractionnés selon leur degré de polymérisation. La comparaison des teneurs aux stades floraison, véraison et chute des feuilles au cours de deux cycles végétatifs consécutifs montre que ce sont les tanins à base de proanthocyanidines extrêmement condensées qui sont les composés les plus importants. La technique d'extraction nécessitant l'utilisation d'un solvant de délipidation, il est vérifié que le chloroforme, d'emploi plus pratique que le pentane, n'entraîne pas de précipitation de polyphénols.
The phenolic compounds of the internodes of Vitis vinifera L. cv. Ugni blanc during growing season:
Study of the evolution of their structure
The total soluble phenolic compounds extracted from internodes of Vitis vinifera L. cv. Ugni blanc were fractionated according to their degree of polymerisation. A comparison of the concentrations at flowering, veraison and leaf fall, during two consecutive growing seasons shows that the tannins containing highly condensed proanthocyanidins are the most important compounds. The extraction technique requires use of a defatting solvent; it is confirmed that chloroform, more practical in use than pentane, does not cause precipitation of the polyphenols.
