Vorkommen und Eigenschaften kondensierter Tannine in Vitaceen

Blattextrakte aus über 80 Sorten und Arten von Vitaceen wurden auf Art und Menge der darin vorhandenen Gerbstoffe untersucht. Es handelt sich dabei um kondensierte Tannine, die hauptsächlich aus Cyanidin- und Delphinidin-Untereinheiten zusammengesetzt sind. Ihr Molekulargewicht liegt um 4000, es sind jedoch auch kleinere Oligomere (Procyanidine) vorhanden.
Die Tannine wirken auf Pektinmethylesterasen und andere Hydrolasen aus Pilzen inaktivierend. Dies beruht auf einer reversiblen Reaktion mit diesen Enzymen. Es zeigte sich, daß Vitis-Arten, die als pilzresistent gelten, eine relativ hohe Tanninkonzentration (>200 μg/g Frischgewicht) in ihren Blättern enthalten, während anfällige meist nur geringere Mengen (<50 μg/g) aufweisen.
Occurrence and properties of condensed tannins in Vitaceae
Properties and amount of tannins in leaves of over 80 species and varieties of Vitaceae were investigated. Only condensed tannins were found, consisting mainly of cyanidine and delphinidine subunits. The prevailing molecular weight was around 4000, smaller oligomers are, however, present.
The tannins inactivate pectine methylesterases and other hydrolases of fungi by a reversible reaction with these enzymes. lt could be shown that Vitis species known as fungus resistant contain more tannins (>200 μg/g) than suspectible ones with generally <50 μg/g fresh weight.
