3,7-Dimethyl-okta-1,5-dien-3,7-diol- eine neue terpenoide Verbindung des Trauben- und Weinaromas

Mit Hilfe der GC-MS-Kopplung identifizierten wir zum erstenmal ein Terpendiol, 3,7-Dimethyl-okta-l,5-dien-3,7-diol, im Aromaextrakt von Vitis-vinifera-Trauben und -Weinen. Es kommt in allen bisher untersuchten V.-vinifera-Sorten vor. Die höchsten Konzentrationen fanden wir in Scheurebe, Riesling und Forta. Trauben der Wildart V. labrusca und der Kultursorte Niagara enthalten diese Verbindung ebenfalls, während sie in V. -riparia-Trauhen bisher nicht nachgewiesen werden konnte.
3,7-Dimetbyl-octa-l,5-dien-3,7-diol - a new terpenoid component of grape and wine aroma
A new terpenoid component, 3,7-dimethyl-octa-1,5-dien-3,7-diol, has been identified by GC-MS in aroma extracts of Vitis vinifera grapes and wines. The highest concentrations were found in Scheurebe, Riesling and Forta. Grapes from V. labrusca and the cultivar Niagara also contain small amounts of this component but it has not been detected in grapes of V. riparia.
