Über die Bildung von Äthanol und einigen Aromastoffen bei Modellgärversuchen in Abhängigkeit von der Aminosäurenkonzentration

In Modellgärversuchen verfolgten wir den Einfluß der Aminosäurenkonzentration auf die Bildung von Äthanol, Essigsäure-äthylester, Propanol-1, 2-Methylpropanol-l und Gärungsamylalkohol (2-Methyl-butanol-l und 3-Methyl-butanol-l).
Die Äthanolbildung erreichte bei einem N-Angebot (als einzelne Aminosäure oder auch als Aminosäurengemisch) von mehr als 120 mg N/l (bei 200 g Glucose/l) einen Sättigungswert von 74,6-76,5 g/l.
Bei der Bildung von höheren Alkoholen fanden wir eine unterschiedliche Abhängigkeit von der Aminosäurenkonzentration. Während der auf Athanol bezogene i-Butanol- wie auch Propanol-l-Anteil mit fallender N-Menge geringer wurde, stieg der Gärungsamylalkohol-Anteil an.
Die anfängliche Aminosäurenkonzentration des Gärmediums spiegelt sich deutlich im Gärungsamylalkohol/i-Butanol- (A/B) und Gärungsamylalkohol/Propanol-l-Verhältnis (NP) wieder. Bei einem N-Angebot von über 250 mg/l erreichte das NB-Verhältnis Werte um 1,4, A/P um 8,6; bei N-Mangel stiegen die A/B-Werte bis 7,6 und die A/P-Werte bis 53,0 an.
