Über die Bildung von organischen Säuren durch Weinhefen <p>I. Quantitative Beziehungen zwischen Stickstoffquelle, Hefestamm und L-Äpfelsäurebildung in Modellgärversuchen</p>

Weinhefen bilden in dicar,bonsäurefreien Nährmedien Äpfelsäure, Weinsäure und Bernsteinsäure. Eine genauere Analyse (enzymatisch) der L-Äpfelsäure in Modellgäransätzen zeigt, daß quantitative Beziehungen zwischen Stickstoffquelle, Hefestamm und L-Äpfelsäurebildung bestehen. Von besonders starkem Einfluß sind dabei die Aminosäuren Prolin und Methionin, insbesondere das Gemisch von beiden. Versuche mit 14C-Glucose und 14C-Aminosäuren weisen im Zusammenhang mit den beschriebenen Experimenten darauf hin, daß L-Äpfelsäure aus Glucose bzw. Aminosäuren gebildet werden kann.Downloads
