Der Bildungsweg des Fuselölalkohols Hexanol in Modellgärversuchen wurde gaschromatographisch untersucht. Hexanol macht sich schon in Mengen von 1 μl/l Wein geruchlich und geschmacklich bemerkbar und erinnert an den sog. Holzgeschmack eines Weines. Es entsteht während der Hefogärung als Stoffwechselprodukt der Hefen und noch stärker infolge Reduktion durch gärende Hefen, wenn den Gärversuchen Hexen-2-al-1 (Hexenal) zugegeben wird. Hexenal gelangt infolge enzymatischer Oxydationen je nach Reife und Aufbereitung der Tmuben in unterschiedlicher Menge in die Traubenmoste. Weitere Bildungswege für Hexanol sind möglich.
