Bei der Weinbereitung spielen Bakterien eine wesentliche Rolle als Erreger von Weinkrankheiten und des in der ganzen Welt verbreiteten und überwiegend wünschenswerten Apfelsäureabbaus, des sogenannten biologischen Säureabbaus. Traubenmost und Wein sind für das Wachstum von Bakterien extrem ungünstige Substrate. Es kommen darin nur Essigsäurebakterien und Milchsäurebakterien zur Entwicklung.
