Spezielle gaschromatographische Methoden erlauben eine umfassende qualitative und quantitative Analyse von Aromastoffen und weiteren flüchtigen Verbindungen in Mosten und Weinen. Quantitative gaschromatographische Analysen-Verfahren wurden vor allem mit der Reaktions-Gaschromatographie und mit dem Flammen-Ionisations-Detektor (FID) ausgearbeitet. Häufig können native, wässrige Lösungen ohne Vorbehandlung direkt untersucht werden. Das „Wasser-Problem" bei der Analyse wird diskutiert. Bei der Untersuchung von Anreicherungen ermöglicht die hohe Empfindlichkeit des FID den Nachweis von Spuren. Diese gaschromatographischen Methoden sind für die Qualitätszüchtung von Bedeutung. Sie tragen wesentlich zur Bildung eines objektiven Qualitätsbegriffes bei.Downloads
