- Die Milchsäurebakterien, die im Wein eine Säureverminderung durch Dekarboxylierung der Apfelsäure bewirken können, bilden beim Wachstum in synthetischer Nährlösung oder Traubenmost Acetoin bzw. Diacetyl.
- An Weißweinen verschiedener Rebensorten wurde festgestellt, daß Weine, in denen der bakterielle Säureabbau erfolgt ist, einen höheren Gehalt an diesen geschmacklich wirksamen Stoffen aufweisen, als Weine o hne Säureabbau.
- Die vorstehenden Untersuchungsergebnisse deuten darauf hin, daß Wein durch den biologischen Säureabbau nicht nur eine Säureverminderung erfährt, sondern auch in der Zusammensetzung geschmacklich wirksamer Stoffe verändert werden kann.
