Über den Gehalt von Isoamylalkohol und Isobutylalkohol in Weinen von Kulturrebensorten und Neuzüchtungen

Der Gehalt von 110 Weinen von Europäerreben und Hybriden an den Fuselölalkoholen Isoamylalkohol und Isobutylalkohol wurde nach Destillation kolorimetrisch bestimmt. Zwischen den Weinen der beiden untersuchten Rebengruppen konnte kein Unterschied nachgewiesen werden. Die Weine von Europäerreben hatten im Mittel einen Gehalt von 0,19 ml Isoamylalkohol und 0,065 ml Isobutylalkohol je Liter, der Gesamtgehalt an höheren Alkoholen variierte zwischen 0,10 und 0,67 ml je Liter Wein. In Weinen von Hybridenreben wurden im Durchschnitt 0,20 ml Isoamylalkohol und 0,065 ml Isobutylalkohol je Liter gefunden, die Extremwerte des Gesamtgehaltes an höheren Alkoholen waren 0,10 und 0,63 ml je Liter. Die Ergebnisse deuten darauf hin, daß der an sich geringe und höchstens in geschmacklicher Hinsicht wirksame Gehalt an Fuselölalkoholen im Wein vom Jahrgang, von Kellerbehandlungsmaßnahmen und vielleicht auch von der Pfropfung der Reben beeinflußt werden kann. Eine Selektion von Rebenneuzüchtungen auf einen besonders niedrigen Gehalt an Fuselölalkoholen im Wein erübrigt sich, da keine Unterschiede zwischen Europäerrebensorten und resistenten Neuzüchtungen bestehen.Downloads
