Eine papierchromatographische Trennung und Charakterisierung von Aldehyden nach Umwandlung in Hydroxamsäuren wird beschrieben und auf Weine und Traubensäfte angewandt. In Weinen der Jahrgänge 1953 - 56 finden sich nur geringe Spuren freien Acetaldehydes, während die Aldehyde nahezu quantitativ als Schwefligsäure-Additionsverbindungen vorliegen. Mit zunehmendem Alter eines Weines treten erhöhte Mengen freier Aldehyde auf. Die Methode wird zur Feststellung des Aldehydgeilaltes der Traubensäfte verschiedener Neuzüchtungen angewandt.Downloads
