Untersuchung des biologischen Säureabbaus im Wein <p>IV. Über Faktoren, die das Wachstum der Apfelsäure-abbauenden Bakterien beeinflussen</p>

Da das Wachstum der Äpfelsäure-abbauenden Bakterien - und damit der biologische Säureabbau - im Wein wahrscheinlich nicht durch einen Mangel an Nähr- oder Wuchsstoffen behindert wird, müssen andere Faktoren die Ursache des häufigen Ausbleibens des Säureabbaus im Wein sein. An Modellversuchen konnte gezeigt werden, daß das Wachstum von aus Wein isolierten Äpfelsäure-abbauenden Bakterien durch höhere Alkoholkonzentrationen als 10 Vol.-%, einen niedrigeren pH-Wert als 3,1 und einen höheren Gehalt als 100 mg schweflige Säure je Liter weitgehend unterbunden wird, während hohe Konzentrationen an Zucker oder Weinsäureanion nicht störend wirken. - Die Möglichkeiten zur Einleitung und Förderung des biologischen Säureabbaues werden diskutiert.Downloads
